Prawn, Chilli and Herb Pasta
Prawn, Chilli and Herb Pasta (serves two)
300 g Cooked Casarecce Pasta
250g Green Prawn Cutlets
2 Long Red Chilli’s sliced thinly
3 Cloves of Garlic sliced thinly
2 Fresh Tomatoes deseeded, peeled and diced finely
¼ bunch Parsley and Chives
250ml Maggie Beer Verjuice
50g Butter, unsalted
- Cook pasta in boiling salted water as per instructions on packet.
- Sauté chilli and garlic in pan on medium heat for I minute, add prawns and sauté for a further 1 minute.
- Deglaze pan with verjuice, add diced tomatoes and simmer for 2 minutes.
- Fold through cooked pasta, fresh herbs and season with salt and pepper and butter.
Serve and enjoy!
