Prawn, Chilli and Herb Pasta

Prawn, Chilli and Herb Pasta      (serves two)



300 g                        Cooked Casarecce Pasta

250g                         Green Prawn Cutlets

2                               Long Red Chilli’s sliced thinly    

3                               Cloves of Garlic sliced thinly

2                               Fresh Tomatoes deseeded, peeled and diced finely

¼ bunch                   Parsley and Chives

250ml                       Maggie Beer Verjuice    

50g                           Butter, unsalted



  1. Cook pasta in boiling salted water as per instructions on packet.
  2. Sauté chilli and garlic in pan on medium heat for I minute, add prawns and sauté for a further 1 minute.
  3. Deglaze pan with verjuice, add diced tomatoes and simmer for 2 minutes.
  4. Fold through cooked pasta, fresh herbs and season with salt and pepper and butter.


Serve and enjoy!
